Fate: A Doyle Witch Cozy Mystery by Kirsten WeissThe Perfect (Witches) Brew By Jayce Bonheim Since I run a coffeeshop, Ground I get a lot of questions about coffee. And I love, love, love answering them. In addition to my passion for java, my fav thing about running a coffeeshop are all the wonderful people who stop in. (This also makes investigating murders easier – my suspects come to me!). But murder’s not what you want to read about. You want to read about coffee! If you can’t make it into Ground (Doyle, California’s best and only coffeeshop!) you can still brew a magical cup of coffee at home. Here are seven tips for making a great cup of coffee: Ingredients count, and that includes the water. If you’re lucky enough to live in the Sierra’s, like we do in Doyle, you can get excellent water out of the tap. But if your tap water isn’t the greatest, it will reflect in your coffee, so use filtered or even spring water in your coffee. And yeah, the beans count too! Of course, what makes a “good” bean can be super subjective. Ethiopian or Costa Rican? There are a whole world of flavors to try. But in general, Arabica beans have a wider range of flavors than the Robusta bean and are considered superior. However, a lot of Arabica beans may include Robusta beans in the mix, so be sure to look for 100% Arabica beans when you buy. Buy fresh! Fresh beans are better beans. Period. Keep ‘em fresh! Store beans in an airtight container and keep them at room temperature. Freezing is not a good idea, and neither is storing them in the fridge. But no matter how well you store them, old beans are still old beans, so try to keep only a 5-7 day supply on hand. Grind them yourself. Coffee beans lose their quality right after you grind them, so it’s best to grind them in your own kitchen just before you put them in the pot, coffeemaker, or French press. Don’t cheap out on quantity! My aunt, god rest her soul, was a thrifty woman, and used less coffee and hotter water to get more for less. But she ended up with bitterer (is that a word?) coffee. Two level tablespoons of grounds per 6-ounce cup is the proper proportion. And about that hot water… If your water is too hot you’ll also end up with a more bitter brew.
