apronfreecooking.comBlueberry Strawberry Shortcake • Apron Free CookingFresh, cool and refreshing, this Blueberry Strawberry Shortcake is the perfect dessert for any summer evening, but especially for your 4th of July celebration. This vintage recipe for biscuits makes the best base for the cool ice cream and fresh fruit topping. I know there are a lot of folks who will debate with me that best base for strawberry shortcake is a form of sponge cake. However, for me and my house, we serve the biscuits. You can make this cake with a little bit of effort and amaze your friends! I know that parades and fireworks might be considered pretty festive 4th of July celebrations, but since I can’t create any of those things and I can make this cake, I’ve decided this is the way to celebrate! I love watching the videos people post of fancy cake decorating. It absolutely amazes me what artistic creations are made from cake and icing. My friend Pam is one of those artists. She constantly creates cakes to suit customer’s requests that have me thinking… “how in the world?” I’m amazed because my creative ability is severely limited in the cake decorating department. I usually smear some warm icing over the top of the cake and let it melt down the sides. I’ll toss out some sprinkles or maybe add candy to the top of the cake, but that’s the end of it.
