Salty cakes – EasynomicThe salty cakes are a good alternative of the quiche, in Italy we use to make them with a variety of fillings. They are the ideal for a picnic or, if cut in square, for a buffet or a party. Moreover, it could be a healthy and alternative idea for your kids’ pack lunch, in fact, are a perfect meal light and substantial. The salty cake is a sort of Italian version of the pie, there are tasty and really quick to prepare. There are good also cold so you can make them the day before. Salty Cake: A good idea to don’t waste your food The more classic in Italy are those with ricotta and spinach, sausages and leek or prawns and courgette. I made mine with what I found in the fridge but you are free to use your fantasy and make this delicious cake with almost whatever you like. Often I made the salty cake when I want to clear the fridge and I use the vegetables or the various cheese or mixed cold cuts to realize different cakes. You can also decide to make it for don’t throw away your food close to the expiration date or to save your veggies from the organic bin. You can make yourself the dough for the puff pastry but honestly, I use the ready one that found on the shops. It saves time and you can’t fail in realize a perfect and succulent cake. I would suggest you keep always a roll of puff pastry in your fridge for any eventuality. The forecast for this weekend in the UK is good, hot and sunny! Mediterranean Salty Cake Time to prepare: 10 minutes Time to cook: 30 minutes Ingredients for 1 cake: 250gr of Aubergine, 2 mozzarellas, 100gr of cherry tomatoes, olive oil, 50 gr of grated parmesan, Basil, 1 roll of puff pastry, salt, and peppers. How to prepare Dice the aubergine, the tomatoes and the mozzarellas. Fry quickly the aubergine in a pan. In a bowl place the tomatoes, the mozzarellas and the fried aubergine and dress it with the basil, olive oil, salt, and peppers. Lay in a baking tin the puff pastry with his kitchen paper. Fold the border and and with a fork pierce the base. Pour the content of the bowl into the tin, spread and place in the oven at 180 for 30 min. Courgette Salty Cake Time to prepare: 10 minutes Time to cook: 30 minutes Ingredients for 1 cake: 2 courgette, 250 gr of ricotta, 1 egg, 50 gr of grated parmesan, 1 roll of puff pastry, salt, and peppers. How to prepare Blend the courgette, Mix it with the egg, the ricotta, the parmesan, salt and pepper. As before lay in a baking tin the puff pastry with his kitchen paper.
